Shiro Shoyu / White Soy Sauce.

A new intervention that carefully blends and unifies, which fits perfectly into the vibrant atmosphere of China Town London. Inspired by Culinary needs and deconstructive architecture, the proposal sits above a significant Taiwanese Restaurant. Importing aged white soy sauce is not easy, so why not produce their own on the rooftop, here in London. The proposal shows a self sufficient small scale soy sauce factory as an upward extension to the current restaurant. A summer garden produces the beans which are harvested and taken into the space of the lower floor, dimly lit through a perforated skin. Fermenting beans are stored in barrels, prior to being bottled and taken down to the restaurant for use.
